Pineapple Salsa
I like pineapples. And I like pineapple salsa. Last time I made pineapple salsa, I used crushed pineapples from a can (GAH sugar syrup). However, when the urge to make pineapple salsa hit me this time, pineapples were on sale at Whole Foods, so I went ahead and got a whole one.
Here’s how I made the pineapple salsa:
1/2 pineapple chopped up in a food processor or cut up into little pieces with a knife
1/2 medium onion chopped up
1/4 cup of orange juice
6 or 7 small red/green peppers chopped up
1/4 cup of cilantro leaves
1/8 cup of mint leaves
Mix together in a tupperware container, cover, leave overnight to become awesome in the fridge. Profit.
Note: I don’t really measure anything. I eyeball everything. Measurements above are given for your reference.
